Sweet Potato Fries
Prep Time: 15 minutes
Cook Time: 30 minutes
3 sweet potatoes
1/4 cup olive oil
Pre-heat oven to 450 degrees.
Wash sweet potatoes.
Cut off the ends and cut the potatoes in half lengthwise. Try to cut them evenly into 1/4 inch wide strips so they all cook at about the same rate.
Place the cut fries in a large bowl and add olive oil. Use your hands to mix and be sure all potatoes are coated with olive oil.
Spread the sweet potatoes out in a single layer on a foil lined baking sheet.
Salt and Pepper the potatoes.
Bake for a total of 25 to 30 minutes. After the first 15 minutes, remove the baking sheet from the oven and turn over all of the sweet potato pieces. Return to the oven and bake for another 10-15 minutes, or until they are well browned. Let cool for 5 minutes before serving.
The baking times are approximate based on the thickness of the potatoes and if you prefer them soft or more crunchy.
I just read this in a magazine. I haven’t tried it myself – yet, but if you like your sweet potato fries crispy, try soaking the potatoes after you cut them, in water for 30 minutes. This is suppose to release the starches. Pat the potatoes dry and then add the olive oil and continue with the recipe directions. I’ll let you know how it goes the next time I cook this recipe.
